Wild Mushroom Stuffing

This Thanksgiving stuffing includes wild mushrooms, fresh herbs and diced turkey liver. It will definitely make your guests want more and more. The Wild Mushroom stuffing will take a total of One hour and 45 minutes to make. It has 270 calories a serving. If you prefer not to have the turkey liver in the recipe, you can omit it. You need the following ingredients:

-10 cups of day-old bread, without crust that are cubed.

-3 cups of low-fat milk.

-3 Tablespoons extra-virgin olive oil, divided.

- 1 turkey liver or 2 chicken liver diced (can omit).

-3 tablespoons unsalted butter.

- 8 cloves garlic, minced.

-4 shallots, finely diced.

- 2 cups finely chopped onions.

-2 pounds of chanterelle mushrooms or mixed wild mushrooms, stemmed, cleaned and coarsely chopped.

-1/4 cup chopped Italian parsley.

-2 teaspoons finely chopped fresh thyme.

-1 teaspoon salt.

-Freshly ground pepper to taste.

- 2 large eggs, lightly beaten.
